Strufoli

One of my dad’s recipes. This is a traditional Italian Christmas Eve dessert.
Very sweat and great with Espresso.

4 cups flour 4 teaspoons baking powder
1/2 cup sugar 1/3 pound butter, soft
4 eggs 3 tablespoons milk
1 teaspoon of one of the following extracts
honey
vanilla extract confectioners sprinkles,
(The hard round ones)
teaspoon lemon extract
teaspoon orange extract maple syrup
teaspoon rum extract

Make a well in the flour. Add remaining ingredients (except honey (syrup) & sprinkles). Mix with fork or hands until thoroughly blended and dough pulls away from the sides of the bowl to form a rough ball. Knead on floured board until smooth and glossy (about 10 minutes). Refrigerate at least 1 hour. Shape dough into small balls. Heat oil to 350 degrees. Fry a few balls at a time until golden brown. Drain. (you can bake the balls instead of frying) Shape fried balls into a cone. Heat honey (mixed with maple syrup if used). Pour hot honey over balls. Add Sprinkles. Mix.
